It's nice to have leftovers from that mega piece of roast beef last night. This is the Roast Beef Sandwiches with Pesto Mayonnaise. The best part of it is the tiny gherkin pickles. I've been snacking on them like mad! When I was a kid my favourite after school snack was dill pickles with chocolate milk. I actually had that combo last night for the first time in 20 years and it wasn't as great as when I was young. It's actually stomach curdling!I made pesto this recipe calls for from scratch yesterday. I love making pesto and then freezing portions for the future.
